Why deny?

I'm assuming you live in the US. Many people her are taught that masturbation is bad. We are a very conservative country so even if it's not that that she was taught that at home she still may be embarrassed about it.
As to why she masturbates in the first place, different people have different sexual needs. Perhaps she has some fantasy she uses to satisfy herself and that may also embarrass her. Maybe it is something she wants to do but is afraid you will disapprove.
My suggestion would be to quietly masturbate yourself alongside her. This might show her that you are open to talking about her needs.
