He has a past, I was actually shocked he told me the number of girls in his past. I understand he's 32 and I'm 22 so he's had more girls than my previous experience.
But he says that's all in the past and he knows now I'm the one for him.

People do change with age certainly and it sounds like he's being sincere. He was totally honest with you which is good so I say go for it. I'd honestly have some reservations given his past but that's just me.
